HOW DID ST. PATRICK’S DAY GET STARTED AND….. WHAT FOODS DID THEY EAT?

Well let’s get started with: How did it get started?

It seems that St Patrick’s day started in 1631 and was a RELIGIOUS FEAST day to celebrate annually of the death of a missionary who was credited for spreading Christianly to Ireland.

Now let’s get to the good stuff, FOOD!

It seams that in Ireland they never ate corned beef and cabbage. That was basically an American-Irish tradition. However here is what the Irish actually ate on St. Patrick’s Day. It was a Fish Fry for breakfast. A fish fried breakfast was to get you started for the day. They also had, Irish Soda Bread.

Recipe #1; FISH FRY-
STEP !
6 thick slices of bacon in a single layer in a lg. skillet over medium heat. Fry on both sides and remove from pan but save the grease.
STEP2
Add 2 tlbs. of butter or margarine to the skillet and melt. Crack 4 eggs into the pan, being careful not to break yolks. Place 2 sml tomatoes sliced , 11/2 cups whole mushrooms and 4 slices of soda bread into the skillet, keeping everything separate. Fry gently stirring mushrooms and tomatoes occasionally. Flip bread to brown on both sides.
STEP 3
When egg whites are set but yolks are still runny, dish half of everything onto each of two warmed plates and serve immediately.
( to be really authentic buy back bacon, it’s oh so much better.

Recipe #2 Irish Soda Bread-
Step 1
Preheat oven to 375 degrees F (190 degrees C) Lightly grease a large baling sheet.
STEP 2
Mix 4 cups all-purpose flour, 1/2 cup softened margarine, 4 tabls. white sugar,1 tsp. baking powder and 1/2 tsp. salt and stir together in a large bowl. Stir in 1 cup of buttermilk and 1 large egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round loaf and place on the prepared baking sheet. Note the the dough will be a little sticky.
STEP 3
Combine 1/4 cup melted butter with 1/4 cup buttermilk in a small bowl; brush loaf with this mixture. Use a sharp knife to cut an X into the top of the loaf.
STEP 4
Bake in a preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 mins. Check for doneness after 30 min. You may continue to brush the top of the loaf with the butter mixture while it bakes.
